Comparing to Japanese cooking culture, various fresh-water fishes are generally regarded as
an important food supply in China. (like Catfish, Gigi, carp, Ootanago, Taunagi, sturgeon etc.)
 
Taihu lake watershed is also well-known for its productive fishing industry,  it is believable that the rich
biodiversity supports the rich cooking culture;
 
meanwhile, retional utilization to the fresh-water fish resource also should be considered as a
key point to the biodiversity conservation in this area.
 
We tried to order fresh-water dishes in possible to record a slice of the rich cooking culture of this country.
